Led by our Group Executive Chef, Stefan Matz, our team’s mission is to create dishes that make the finest of Ireland’s cuisine accessible to all. In creating The Bistro, our team spent over twelve months researching and collaborating with suppliers, both in Monaghan and around Ireland.
